~ 16 - 20 dove breasts skinned & filleted off the breast bone
~ 2 eggs
~ 2 cups milk
~ 2 cups flour
~ black pepper
~ fajita seasoning
~ steak seasoning
~ canola oil
Marinade the breasts with beer, pepper, fajita seasoning and the steak seasoning.
Heat the canola oil in a iron skillet over medium high heat.
Cook the breasts in the preheated oil until golden brown, turning half way through.
Use the pan drippings to make a cream gravy. Season the gravy with more of the pepper, fajita seasoning and the steak seasoning. Also try adding a little cayenne pepper to kick it up a notch if you want.
Served with garlic mashed potatoes & buttered corn
